The Sandwich Stall

The Sandwich Stall is one of the busiest spots in The English Market; they do a roaring lunchtime trade. Their salads and sandwiches are top notch and truly delicious. As their business grew and grew Jenny Rose and Toby (also of The Real Olive Co and Toonsbridge Dairy fame) were increasingly stuck for space. When the stall next to theirs came available they decided to go for it.

That’s where I came in. Jenny Rose asked me to help design and project manage the expansion. It was to tie in with the existing style, but allow for a general freshening up of things overall. Mostly, it was about carefully maximising the use of space taking into account the highly pressurised daily service and need for storage.

Jenny Rose’s good eye and appreciation for craftsmanship and quality was a pleasure to work alongside. We successfully managed to integrate a brand new coldroom, sparkling stainless steel work stations, new resin flooring and efficient task lighting into a warm and welcoming scheme filled with beautiful timbers and a fantastic backdrop of just-the-right-green.

Amongst many others, special shout-outs go to Gerry Bannon, who could probably build a car out of timber if you asked him nicely, such is his skill. Signage (yes it’s meant to read ‘The SandFish Stall’; a nod to the previous stallholders) by Cormac Sheil. Flooring by the lovely Luca Pentek.
