Conor MacNamara’s grandfather had a stall in the English Market years before him, so it seemed fitting to establish his brand new business under the same roof. Conor, having travelled extensively and trained under top sushi masters, opened Maki Sushi Rolls. Also a handy carpenter, Conor was able to handle most of the fitout himself. With such a small space we had to design every inch with precision. The concept, a first for Cork, if not Ireland at the time, grew a loyal following and brought a younger and international customer in to the market. I helped Conor with the layout, shopfront, signage, lighting, logo packaging, uniforms, social media and more.
