I met Eoin McCarthy first when he set up Gulpd in the Triskel Arts Centre. He and his partner Alex opened up Filter Brew Bar & Cafe soon after and it became a regular haunt for me. Eoin’s got a fantastic eye, well versed in design and the arts, he opened up one wall of the shop for artists to show their work.
I’d heard Eoin excitedly tell his Fab Food Trail guests all about coffee, its origins and the whole ‘bean to cup’ process many times. I too share this enthusiam for connecting people with the source of their foods. One thing led to another and we decided to do a little collaboration on the walls of the shop. I was thrilled with the outcome and honoured to feature in Filter!
